For classic Texas-style barbecue in any backyard, Char-Griller offers their Smokin' Pro Charcoal Grill. Using a traditional barrel design, Char-Griller optimizes heat convection and circulation to cook ribs or burgers evenly and efficiently. The grill offers 580 square inches of cooking space in the main grill, ideal for hosting a family barbecue in the backyard. The charcoal side firebox offers an additional 250 square inches of cooking space, bringing the grill's total space to 830 square inches. Barbecue chefs might employ the side firebox to roast a side dish of corn or vegetable shish kabobs for vegetarians in the family.
The barrel of the grill and side firebox are crafted in heavy-gauge steel with powder-coat finish to endure high heats and long-term use. A double bottom also increases the grill's durability. Nonstick grill grates constructed in cast iron resist warping and embellish the heat and flavor distribution to meats as they cook. Grate height also may be altered for different dishes. Slide-out coal drawers enable cooks to add charcoal while cooking without removing grill grates and dump residual ash easily. A rack below the grill supplies convenient space for seasoning spices, paper plates, hot pads, and barbecue accessories. The airtight-flanged grill hood keeps bugs and debris out while containing flames and heat. The hood also features a heat gauge for temperature monitoring. As a smoker, it is OK for the occasional smoking event, but if you envision smoking a lot, you need to get something better. The heat does not evenly distribute throughout the grill when using the smoker. It is much hotter at the end near the smoker box, and much cooler at the other end, so you are forced to move items around a lot. And in order to move items around, you have to open the grill too often, which increases cooking time significantly. If you plan on doing the occasional rack of ribs, or brisket, or pulled pork, it works just fine, but it is definitely not designed to be a full time smoker. Also, as opposed to the grill, which really resists rust, the smoker box can and will rust. The temperatures from the smoker box will quickly burn off the paint from the box. It doesn't affect the cooking, but it doesn't look great. Additionally, the rails that hold the charcoal/wood tray in the smoker box will eventually rust out.
I tend to use the grill three or four times a week, and use the smoker once every month or two. If that is what you envision, you can't go wrong with this. If you intend to smoke several times a week, or smoke a large quantity of food, buy a much better smoker.
At this price point, if you are considering buying this smoker understand that you probably will only get 3-5 years of life out of it, the paint will chip due to heat, you may see some rust within the first few months, and dialing the heat to a specific temperature can be challenging. It will however make some really good barbecue along the way, or be a good charcoal grill for steaks/burgers.
I use it a couple times a week and it works fine, a little flimsy and my biggest wishes are that it managed heat a little better as it is really difficult to get the heat down to 200-225 degrees and that it did not start rusting so quickly. Literally within the first month and using it three times, the firebox started chipping paint and now is rusted some. It did not affect the performance, however it looks like crap. I do cover it after every use but I am thinking that maybe I will get three years out of this smoker. I also understand that I can buy some sealer and do some modifications to improve performance yada yada yada ... yeah that's not happening.
As stated, just understand that you are not paying over $1000 for this unit as those units due have better powder coating on thicker gauged metal that does not leak as much smoke and easier to control.... But last times I checked, my RIBS I had Sunday night were amazing and the smoker only cost me $250. Good luck.
